We cultivate chillis from the mildest to the hottest in the world. Each year, we experiment with new varieties from around the globe to keep things exciting and to offer our customers a diverse range of flavours and heat levels. Our commitment to quality ensures that each chilli is carefully grown and harvested to bring out its unique characteristics. Here are our chillis for this season.
The Scoville scale is a measurement of pungency (spiciness or "heat") of chili peppers and other substances, recorded in Scoville heat units (SHU).
Aji Limon
SHU: 30,000 - 50,000
From Peru and is bright yellow and citrusy, like its namesake.
Used widely in Peruvian cooking, adding both a citrus tang and a chilli sting.
Birds Eye
SHU: 50,000 - 100,000
From Thailand, one of the most popular and common chilli varieties available in Australia. Produces small chillies which ripen from green to red.
Carolina Reaper
SHU: 1,500,000 - 2,200,000
From America, this is currently the hottest chilli in the world. Whilst it is said that behind the heat it has a fruity flavour, it’s not easy to find given the heat of this chilli. This chilli is not for the faint hearted and should be handled with extreme care.
Oz Brain Killer
SHU: 750,000 - 850,000
The heat level of this chilli is super hot! It ''burns'' instantly! The chilli pod looks quite similar to the Scorpion, execpt pods are longer and the flesh is very wrinkled.
Primotalii Chocolate
SHU: 1,000,00 - 1,100,000
The Primotalii Chocolate has an intense heat level, some saying it’s the hottest pepper they've ever eaten. Also has a complex flavour profile. Similar to other chocolate varieties, it has a smoky, slightly floral flavour profile.
Big Black Mama
SHU: 850,000 - 900,000
Big Black Mama is a GNARLY super-hot chilli! It is an impressive looking, large chilli, and the plant is a good producer. They ripen from green through to a deep brown colour.
Cayenne
SHU: 30,000 - 50,000
From French Guinea, this well known and popular chilli is rather prolific, grown all over the world, used in a variety of cuisines and commonly used in sauces and spices either fresh and dried.
Poblano
SHU: 1,000 - 2,000
A mild chilli very popular in Mexican cuisine, this chilli can be eaten fresh, cooked, or powdered. Known as Ancho when dry and Poblano when fresh. The pods are extremely large heart-shaped.
Bhut Jolokia - Chocolate
SHU: 900,000 - 1,100,000
The Bhut Jolokia Chocolate is sweet and fruity in flavour, with smokey undertones. It is renowned for its 'slow burn' - with the heat taking about 30sec to kick in, and sticking around for as long as 30mins.
Bleeding Jigsaw
SHU: 800,000 - 1,000,000
The Bleeding Jigsaw chili is native to the Canary Islands, Spain. A cracking looking pepper that bleeds its colour into the calyx and stem. Grows as quite a bushy plant with plenty of pods. Looks amazing as the colour develops.
Habanero Red
SHU: 350,000 - 580,000
From the Amazon, this is cracker of chilli with a clean, intense heat and sweet flavour. Once the hottest chilli in the world, it has a well deserved place in the hot sauce world. A chilli not to be taken lightly.
Peppadew
SHU: 1,000 - 2,000
Peppadew is the brand name of piquanté peppers grown in South Africa that have been pickled and sweetened. A farmer discovered the tiny pepper in South Africa in the 1990s and put it on the market. He described it as “peppery” but “sweet as the dew,” hence the name.
Ring of Fire
SHU: 70,000 - 85,000
Ring of Fire is very useful everyday chilli that is very productive, producing long thin cayenne type pods that are 1cm wide by 6-7cm long. It's chilli peppers mature from dark green to red
Trinidad Scorpion
SHU: 1,400,000 - 2,000,000
The Trinidad Scorpion was the world's hottest chilli from 2011 to 2013, measuring in at 1,463,700 Scoville heat units. Their characteristic shape tapers to a sharp point resembling its namesake - a scorpion tail.
Bhut Jolokia - Red
SHU: 850,000 - 1,100,000
The Bhut Jolokia was the world's hottest chilli between 2007-2011. The red Bhut is considered to be fairly bitter and renowned for their 'slow burn'
Naga Bhut Jolokia
SHU: 850,000 - 1,100,000
Originates from Northern India, commonly knows as Ghost Chilli, is one of the hottest chillies in the world. The heat doesn’t kick in straight away but when it does it will continue to intensify, or rather “bloom” for over 10 minutes, until it eventually subsides.
Jalapeño
SHU: 2,500 - 8,000
From Mexico, this is probably the most popular chilli in the world, and for good reason. It’s a great chilli and so versatile. When ripe and smoked properly, it also becomes a Chipotle.
Piri Piri
SHU: 50,000 - 175,000
Originally from Southern and Eastern Africa, called the Piri Piri Chilli, which is Swahili for Chilli Chilli. Very popular in Africa and Portugal where they use this type of chilli to create their famous chicken Piri Piri which tastes absolutely awesome and is highly addictive!
